Ensaladang Talong (Eggplant Salad)

Ensaladang talong is a popular Filipino salad that's just perfect as a side dish for grilled or fried dishes. It's incredibly quick and easy to make as well. There are no rules about proportions just grill, chop and mix. Absolutely refreshing to the palate and makes you want to have more.



Ingredients:
2 eggplant, grilled and chopped
1 tomato, diced
1 small onion, minced
1 juice of lemon
1 tbsp sweet bagoong (sauteed shrimp paste)
salt and pepper
coriander leaves

Method:
Toss all ingredients together, top with coriander leaves and that's it.

  1. WHAT! How simple is this recipe...I love grilled eggplant and am always looking for ideas of how to use eggplant. Where would I find sweet bagoong though? In a regular Asian supermarket, or somewehre more specialised? Ta.
