Valentine Ice Cream

Romance is in the air! What can be more romantic than making someone their favourite ice cream?  If you don't have an ice cream maker then this recipe is for you.


Ingredients
2 L vanilla ice cream
200g packet chocolate chip cookies, break into small pieces
250g strawberries, raspberries, blueberries plus some extra for topping
1 tbsp rosewater

Method
Line base and side of a 20cm heart-shaped cake tin with plastic wrap. 
Spoon half the ice cream into a large bowl and allow to soften slightly. Mix cookies into softened ice cream. Spoon into cake tin and smooth the surface. Freeze until firm.
Chop berries then lightly crush with a fork. Soften remaining ice cream in a large bowl and roughly mix together with berries. Spread over chocolate chip cookie ice cream and smooth the surface. Cover with plastic wrap and freeze for 3 hours or until firm.
To serve, hold plastic wrap and lift frozen mixture from tin. Invert onto a serving plate. Peel away plastic wrap and top with the remaining berries.
