It's a Filipino tradition to stay up late on Christmas Eve for the night-long celebration of the Noche Buena, before opening presents under the tree.
Each year, my family and I would have Christmas dinner at the usual time and then eat some more at Noche Buena.

Ingredients
2 eggs, separated

1 tsp caster sugar
60 ml Irish Cream
40 ml Brandy
40 ml Brandy
100 ml full cream milk
cinnamon and nutmeg, to garnish
Method
* Add sugar to egg yolks then whisk together until they lighten.
* In a separate bowl, whish egg whites until light, but not stiff. Add Irish cream liqueur and Brandy to egg whites and mix to combine. Add milk and continue to mix.
* Pour egg white mixture to egg yolk batter and continue to whisk until thoroughly blended.
* Add ice cubes and sprinkle with cinnamon and nutmeg.
