Indonesian Gado-gado (mixed vegetables with spicy peanut sauce)




I'm always happy to learn a new dish that I am not familiar with. Yesterday, I made a dish called Gado-gado which means "mix-mix". Recipes like this make me feel really excited. Gado-gado  is a very popular salad in Indonesia and has numerous regional variations. This is a quick, easy and healthy salad that you can have any time of the day. Often the vegetables are cooked and topped with spicy peanut sauce, hard-boiled eggs, krupuk (prawn crackers) and deep-fried tofu.

Ingredients
750g mixed vegetable (green beans, white cabbage, bean sprouts), cut into bite-sized pieces
3 large potatoes, peeled
4 eggs

For peanut sauce
1 cup chicken stock
5 small dried chillies
5 Tbsp crunchy  peanut butter
1 1/2 Tbsp palm sugar
1 Tbsp rice wine


 This sauce is so delicious!


Method
*Cook or blanch the vegetables and potatoes in batches (the hard varieties first) until just tender. Drain and set aside. Cut the potatoes into think slices.
*Hard-boil the eggs, peel and quarter.
*Arrange the vegetables, potatoes and eggs on a platter.
*For the sauce, pour the stock into a saucepan and the chillies and bring to  the boil. Reduce the heat and gradually stir in the peanut butter. Continue to cook and stir until sauce has thickened.
*Mix the palm sugar and vinegar and stir until the sugar has dissolved. Taste and season and add more sugar and vinegar if needed.
*Spoon the sauce over the vegetables and serve tepid, garnished with krupuk (optional).

  1. I LOVE Gado Gado...I haven't made it for YEARS though. I like adding a few potoatos to the vegie mix - makes it extra delicious.
