Sunomono- Japanese Cucumber Salad

This salad is something I've been enjoying for quiet a while now. Don't you just love the crispiness of fresh cucumbers on salads. It's not only a refreshing dish but delicious as well. Cucumbers also help rehydrate and replenish vitamins in your body and are low in calories too. 


Ingredients
1 large cucumber, sliced thinly
3 tbsp rice vinegar
2 tbsp mirin
3 tbsp light soy sauce
1 tsp sugar 
1/4 tsp salt
shichimi togarashi (Japanese seven-spice mixture)
bonito flakes for topping

Method
Combine vinegar, mirin, soy sauce, sugar and salt, stirring to dissolve. Add cucumber toss well to combine. Transfer cucumber on a plate. Sprinkle with shichimi togarashi and bonito flakes. Serve immediately.
