Turkish Delight Pavlova


The much loved
Turkish Delight Smashed Pavlova from Wild Pear Cafe has inspired me to make my own at home. 
Making it is not hard at all as long as you have all the ingredients. 
Now I can make this dessert as often as I want!



Ingredients

250g strawberries, leaves removed and cut in half
3 tbsp caster sugar
1 tsp finely grated lemon zest
1 tbsp cornflour 
1 tbsp water
1 tbsp rose water
3 mini pavlovas
200g thickened cream, whipped 
5 pcs Turkish delight, chopped 
pashmak or Persian fairy floss
a handful of pistachio nuts, chopped 

Method
Place strawberries, caster sugar and lemon zest in a small saucepan. Cover and bring to a simmer over medium heat. Cook stirring occasionally, for 5-8 mins or until strawberries are starting to get a bit soft. Combine cornflour and water in a cup. Stir mixture into strawberries and cook for 2 minutes. Add rose water. Set aside and let it cool.
To assemble, place some strawberry mixture on the center of a plate. Arrange 3 mini pavlovas on top of the mixture. Top with cream, 2-3 tbsp of the strawberry mixture, Turkish delight, fairy floss and sprinkle with pistachio nuts.
